*poof* Weekend is over. Happy Monday! I hope you had a fun, relaxing weekend. We visited a local tree farm that Roger used to work at, caught up on some sleep, watched the Vikes get a win yesterday and I made some yummy egg muffins! More on that later.
For some Monday motivation, here’s what this week’s workout schedule looks like:
I’m still working on my meals for this week. The workouts towards the end of the week will probably be different. We’re hoping to get some hiking in while we’re in Arkansas. I’m doing pretty well on the squat challenge too. I’ve missed a total of two days but I’ve made up the squats during the next day’s challenge so I call that good.
I got all of my workouts in last week and I followed my meal plan too. I’m not sure what’s on the menu this Friday – Sunday but I’m going to enjoy it and try not to eat too much. I’m still working on losing at least 25 pounds. My next weigh-in is on Wednesday and I’m nervous. I know not to fuss about the scale too much but I do need to lose some weight and the scale hasn’t budged at all for the past few weeks.
Trying not to get frustrated and just keep focused on working hard! If you do the work you get the results, right?
Egg Muffins Recipe
These egg muffins are super easy to make! Prep time is 5 minutes or less and then just pop them in the oven. Perfect for meal prep or a quick, healthy breakfast or snack any time of the day.
The cool thing about a recipe like this one is you can add in anything you’d like to create a recipe using ingredients you love. Start with eggs and build from there!
Ingredients:
- 6 eggs
- 1/2 cup shredded cheddar cheese
- 1/8 cup mushrooms
- 1/2 cup diced tomatoes
- Anything else you desire in whatever amount you choose!
Directions:
- Crack eggs and whip together in bowl
- Pour into 6 muffin cups
- Add cheese, mushrooms, diced tomatoes (whatever you want!)
- Bake at 350 degrees F for 25 minutes. (Our oven takes forever, might want to start with ~20 minutes)
