Oooofda. The long weekend is finally over and I can tell my body is in full on detox mode. I hope you had a wonderful Thanksgiving! I definitely ate too much, but it happens every year. I wasn’t feeling too great at all yesterday but today is better. After the food-filled Thanksgiving weekend, I’m focused on getting back on track with cleaner foods again.
During our weekly trip to Aldi for grocery shopping we picked up some sweet potatoes. I’ve done this probably 12 times and I always let them sit. And sit. And sit. Until finally they need to be thrown away. I know sweet potatoes are great for me but I have a really hard time eating them. I don’t mind the taste but I hate the texture if they’re mashed or mushy. I just can’t do it.
I was determined to use these babies this time around so I thought I’d try preparing them in a different way. I’m a HUGE fan of roasted red potatoes mixed with olive oil and dry onion soup mix so I figured why not try something similar with the sweet potatoes.
So I bring you…
Roasted Sweet Potatoes
I pretty much copied what I do with red potatoes but used italian seasoning because it’s all we had. And I’m glad I did!
These are so good.
Ingredients:
- 3 sweet potatoes (mine were average size from Aldi)
- 2 T. olive oil
- Italian seasoning (to taste)
- Salt and pepper
Directions:
- Preheat oven to 350 degrees.
- Prep sweet potatoes and cut into ~1 inch cubes (I washed my potatoes, brushed the snot out of them, cut out any weird spots and left the skin ON)
- Put sweet potatoes into a mixing bowl and combine with olive oil, seasoning, salt and pepper. Mix well.
- Pour onto pan lined with foil.
- Bake for ~40 minutes.
*Keep in mind that baking times may vary because ovens are different. Forty minutes was perfect for me.
*Cutting raw sweet potatoes is tough. You can microwave them to soften them a bit before cutting.
