Today marks the second week in my vegetarian meal plan series! You’ll notice this meal plan has a very similar style to last week’s but the meals do vary a little bit. Like I’ve said before, it’s just easier (and cheaper!) for my family of SIX if we all eat similar things throughout the week. Breakfasts, snacks and lunches are all very similar and then we switch it up more for dinners. And guess what? Nobody complains as long as we switch it up each week. :)
Tip: If you have kids and you aren’t sure you’re able to get them on board with this type of meal planning, tell them that’s all there is. Ha! But really, I’d highly suggest involving them and letting them help you choose the meals and snacks for the week. This gets our kids a lot more excited. They also love to help prepare the meals sometimes. I consider that a win-win.

Vegetarian Meal Plan: Week Two
My daily menu (typically the same for the week)
Breakfast: Oatmeal + Greek yogurt
Snack: Pear or Orange + Crackers + Cheese
Lunch: Soup + Crackers + Sandwich (or dinner leftovers)
Snack: Protein Smoothie or Crunchy Raisin Bran

Monday: “Chicken” + Rice + Mixed Veggies
Tuesday: Spaghetti + Salad + Garlic Bread
Wednesday: Boca burger + Carrots +Potato fries
Thursday: Vegetable Noodle Soup (from this recipe book)
Friday: Scrambled egg burrito + Black Beans + Salsa + Cheese
Saturday: Leftovers
Sunday: Miss G’s choice – it’s her 10th birthday
